Roast Cajun Veg and Tofu

What originally started life as a Slimming World Recipe for tofu 5-spice skewers, got changed so much it barely resembles the original any more.

I love making this recipe after a busy day at work as it doesn’t take much effort, is really satisfying to eat and can be made with whatever vegetables are sitting in your fridge.  The recipe below uses button mushrooms, cauliflower and courgette, but these can be swapped out for any veg you like.

Roast Cajun Veg and Tofu

Crispy, marinated tofu and tasty roast veg come together to make a comforting TV dinner that can be enjoyed with anything.

Ingredients

  • 1 block plain tofu diced
  • 1 head cauliflower cut into florets
  • 200 g button mushrooms
  • 1 courgette sliced

For the Marinade

  • 6 tbsp tomato puree
  • 2 tbsp light soy sauce
  • 2 limes juice
  • 2 tsp cajun spice mix

Instructions

  1. Preheat the oven to 180 degrees C

  2. Mix together all the marinade ingredients in a small jug

  3. Dice the tofu into 1/2 inch cubes

  4. Pull the cauliflower into florets

  5. Slice and half the slices of the courgette

  6. Put all the chopped veg with the marinade into a large bowl and mix thoroughly so that all the veg is coated

  7. Transfer everything to a deep roasting pan

  8. Roast for 45 minutes

Great served with a fresh leafy salad, or cooked bulgur wheat.
