Diet Coke Chicken is a family favourite. I love watching people’s faces when I tell them what the secret ingredient is!
I read somewhere that using Fanta instead of Cola can make a sweet n sour sauce, so after scouring pinterest for the best way to tackle this, and experimenting on a few unsuspecting friends, I settled on this super low syn version of sweet n sour sauce. If you’re not overly attached to the pineapple, then you can leave it out for a syn free version. Alternatively, add the pineapple when you serve it then it doesn’t acquire syns. Personally, I can’t get enough of how juicy the pineapple gets when it is cooked in the sauce, and I figure 2 syns it well worth it.
Sweet n Sour Chicken
A sweet, tangy sauce for when you're hankering for a Chinese Takeaway. 2 syns per serving.
Ingredients
- 500 g Quorn brand chicken style pieces
- 2 red peppers
- 1 green pepper
- 1 onion
- 2-3 carrots
- 400 g pineapple fresh or frozen
- 3 tbsp tomato puree
- 1 veg stock cube
- 2 tbsp light soy sauce
- 1 tbsp white wine vinegar
- 330 ml Fanta Zero
Instructions

peel and slice the carrots, cut the peppers and onion into large chunks

add all the ingredients to a very large non-stick pan, mix well and bring to the boil

reduce the heat, cover and simmer for about 45 minutes, until the veg is softened to your liking and the sauce is sticky
