Cranachan

Cranachan is a traditional Scottish dessert made with raspberries, honey, whisky, toasted oats and a local Scottish soft cream cheese.  Swapping out the honey for granulated sweetener and using Quark turns this indulgent treat into a low-syn, low effort pudding that can barely be distinguished from the real thing.

Ingredients

  • 500 g plain quark
  • 40 g rolled oats
  • 4 tbsp sweetener
  • 2 tsp vanilla essence
  • 350 g raspberries fresh or frozen
  • 90 ml whisky

Instructions

  1. toast the oats in a dry frying pan over a low heat until they start to go dark and smell a touch nutty

  2. mix the quark, sweetener, vanilla and whisky until smooth

  3. gently stir in the raspberries
