The combination of pesto and potatoes as part of this soup give rise to its Genovese designation. Some of the ingredients are a little less italian than an authentic recipe might call for (hello mushy peas!) so we call this “Green Soup” at home. 1 syn per serving.
Genovese Soup
A really filling, tasty soup. Pesto and Potato and some less traditional ingredients. 1 syn per serving.
Ingredients
- 1 onion diced
- 1 yellow pepper diced
- 350 g miniature potatoes diced
- 200 g green beans cut into 1/2 inches
- 200 g spinach roughly chopped
- 1 courgette diced
- 2 veg stock cubes
- 1 tin chopped tomatoes
- 1 tin mushy peas
- 300 g soup pasta
- 2 tbsp vegan pesto
Instructions

prepare all the veg

add all the ingredients except the pasta and pesto to a large pan

bring to the boil, reduce heat, cover and simmer for about an hour

10 minutes before it is ready to serve, add the pesto and pasta and cook for a further 10 minutes or until the pasta is tender
Both Sacla and Tesco sell a vegan pesto under the guise of “Free From” as they are also gluten free. You could, of course, make your own pesto to add to this soup too.
