Pasta Carbonara

Yummy savoury carbonara without the egg.  Vegetarian and syn free, using just 1 healthy extra A.

Ingredients

  • 200 g Dried pasta
  • 5 slices Quorn ham free chopped
  • 300 g Mushrooms diced
  • 60 g Primula Cheese
  • 30 g Pecorino Cheese grated
  • 2 cloves Garlic crushed
  • 1 Veg stock cube crumbled

Instructions

  1. Cook the pasta in salted water, according to the directions on the pack

  2. To a large, non-stick pan, add the mushrooms, stock cube and garlic along with a couple of tablespoons of water.  Cook gently until the mushrooms are soft.  Add more water if needed.

  3. Add the ham and stir to ensure the pieces are not all stuck together.

  4. Once the pasta has cooked, add the cheeses and about 200ml of the pasta water to the ham and mushroom mix and stir throughly until a creamy sauce is formed.

  5. Stir the pasta through ensuring it is all coated in the sauce.  Serve.

Recipe Notes

Pecorino is a vegetarian Italian hard cheese like Parmesan.  Make sure your cheeses are vegetarian!
