Dirty Noodles

quick and easy, syn free noodle dish

Ingredients

  • 1 nest vermicelli rice noodles
  • 120 g shiitake mushrooms chopped roughly
  • 1 cup quorn mince
  • 2 tbsp tomato puree
  • 1 clove garlic minced
  • 1 inch ginger minced
  • 1 stock cube
  • 100 g fat free greek yoghurt
  • ½ tsp paprika
  • ½ tsp nandos salt
  • salt and pepper to taste
  • drizzle sriracha if you like

Instructions

  1. put the noodles in a bowl of boiling water, cover and leave to cook

  2. throw all the other ingredients apart from the yoghurt into a large frying pan with a splash of water

  3. cook for around ten minutes, adding more water if it starts to look a bit dry or stick to the pan

  4. remove from the heat and stir the yoghurt in

  5. drain the noodles and add them to the pan

  6. stir everything together, dump it into a large bowl and drizzle some sriracha on top (½ syn only for the sriracha)
