Black beans and rice

Ingredients
- 1 cup uncooked white rice
- 1 tbsp kerrygold butter
- 1 tin black beans drained
- 1 medium red pepper chopped
- 1 small onion chopped
- 2 cloves garlic minced
- 0.5 tsp tabasco sauce optional
- 1 tsp dried oregano
- 1 tsp dried corriander
- salt and pepper to taste
- 2 tbsp cider vinegar
Instructions

cook the rice in salted water, according to the pack instructions

heat the butter in a large frying pan or skillet, saute the onions and pepper for 3-4 minutes, until just beginning to soften, then add the garlic and saute a minute more. Add the blank beans, vinegar and tabasco. Bring to a boil, reduce heat, cover and simmer for 5 minutes
