Black beans and rice

Ingredients

  • 1 cup uncooked white rice
  • 1 tbsp kerrygold butter
  • 1 tin black beans drained
  • 1 medium red pepper chopped
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 0.5 tsp tabasco sauce optional
  • 1 tsp dried oregano
  • 1 tsp dried corriander
  • salt and pepper to taste
  • 2 tbsp cider vinegar

Instructions

  1. cook the rice in salted water, according to the pack instructions

  2. heat the butter in a large frying pan or skillet, saute the onions and pepper for 3-4 minutes, until just beginning to soften, then add the garlic and saute a minute more. Add the blank beans, vinegar and tabasco. Bring to a boil, reduce heat, cover and simmer for 5 minutes

  3. Stir in the rice, oregano, salt, pepper and corriander
